1 cup of Quinoa seed previously cooked Karavansay.
1 cup of precooked cornmeal.
¾ cup Karavansay Quinoa Flour.
1 ¼ cup of water.
Pinch of salt.
To give it color, use 1/4 of purple cabbage or you can also use beets, coriander or turmeric.
- In a bowl, place the water, salt, purple cabbage, cornmeal, quinoa flour and quinoa seed, mix well and knead by hand, make balls and then crush them to shape arepas, heat the griddle or budare, grease with ghee and place over high heat, flip to grill on both sides.
- They can be filled with cheese, eggs, chicken, avocado, whatever you like.
